Quick and Tasty; 3-minute Kale Greek Salad

Updated: Jun 18

If you are looking for a quick, healthy, delicious lunch option this is it!

I think we can probably all agree that eating healthy is not convenient, but like it must be done.

So what are you to do when there are 15 minutes left before you have to leave for work and you

have done absolutely nothing in the way of preparing lunch/dinner for yourself. Plus your hair isn’t brushed and you aren’t even wearing pants.

Do you..

A) Crawl into bed and give up on today, it hasn’t started out well anyway.

B) Just eat out again, it’s not the new year yet so are new habits really necessary?

C) Sing in the mirror for 16 minutes and be late to life.. again.

D) 3 minute kale salad you saw on that blog that one time. BONUS- you have time for pants and a hairbrush!

No matter what you picked, I’m going to go ahead and share this must have recipe with you because its literally been my lifesaver lately!

Health Benefits

Kale is a highly nutritious leafy green vegetable with numerous health benefits. It is an excellent source of vitamins A, C, and K, along with significant amounts of vitamin B6, calcium, potassium, copper, and manganese. Loaded with powerful antioxidants like quercetin and kaempferol, kale helps combat oxidative stress and inflammation. Its fiber, potassium, and antioxidants contribute to cardiovascular health by helping to lower cholesterol and blood pressure levels. Additionally, kale's high fiber content promotes healthy digestion and regular bowel movements.

The vegetable is also beneficial for bone health due to its high levels of vitamin K and calcium, which can help prevent osteoporosis. Omega-3 fatty acids and other compounds in kale have anti-inflammatory properties, reducing inflammation linked to many chronic diseases. For eye health, kale contains lutein and, antioxidants that help reduce the risk of macular degeneration and cataracts. The fiber and sulfur compounds in kale support the body's detoxification processes, particularly in the liver.

Furthermore, with its low calorie and high water content, kale can aid in weight management by promoting a feeling of fullness without adding many calories. Incorporating kale into your diet can provide these benefits, contributing to overall health and well-being.
